Purpose
The purpose of this document is to outline the responsibilities and procedures for managing catering orders through Toast. Accurate and timely execution of catering orders is essential to maintaining a high standard of guest satisfaction and accounts for a significant portion of our business. This guide ensures that Managers on Duty (MODs) and Catering Builders consistently deliver complete, on-time, and well-organized orders in line with our brand standards.

Receiving Orders
- Catering orders are received in real-time via Toast and through email.
- Orders may be placed by guests directly or by the Catering Support Center.
- The MOD or Catering Builder is responsible for processing all incoming orders.
Reviewing & Printing Orders
- Access all catering orders in Toast under the Catering Tab.
- Create a folder labeled 'Catering BEOs' to organize printed orders.
- View and print orders for the current day, the next day, or the upcoming 7 days.
- Print an extra copy of any sandwich orders for the line team.
- Place printed orders on the catering clipboard.
Confirming Orders
- Each afternoon, the Catering Support Center sends a report with scheduled catering orders and pickup/delivery times.
- MOD must review Toast and ensure all updates are reflected on the catering clipboard.
Executing Orders
- MOD follows up regularly with the Catering Builder to ensure standards are met.
- Ensure order is taken to the routing area 10 minutes prior to driver arrival.
- Review and follow special instructions on the order sheet.
- Ensure BEO is in the catering tote bag with guest's name, contact info, and order number.
- Cross-check items with Order Sheet and Build Book including pack list, sauces, rice, pita, etc.
- Confirm all labeling and packing standards are followed; bags should be layered and not overfilled.
