Purpose
The purpose of this document is to provide clear procedures for determining par levels in each Roti Restaurant. Establishing accurate pars ensures adequate product availability for daily operations and helps avoid over-ordering, waste, or product shortages.

Overview
A par is the standard amount of a product needed for a given period of time. Pars are established every period by the GM and are used as guidelines to determine how much product needs to be ordered for each delivery.
Determining Pars
- Pars must be updated during the first week of each period (or more often if needed).
- They should reflect changes in seasonality, business volume, product additions, or recipe updates.
- Franchisees must audit pars during full visits at least once per quarter.
Calculating Pars
- From "CTUIT", select 'Inventory > Reports > Inventory Item Usage'.
- Choose location and select dates for the previous period.
- Click 'All' under GL Codes and run the report.
- Divide each item's quantity used by number of weeks in the period.
- Export to Excel for easier calculations using formulas.
Calculating Ordering Pars
- Determine daily pars using Finance's daily sales % of the week.
- Multiply each item's weekly par by the corresponding sales % for that day.
- Use daily pars to create Order 1 and Order 2 pars.
- Order 1: Saturday (order placed) through Wednesday (before next delivery).
- Subtract on-hand from Order 1 par to determine order quantity.
Special Order & Low Usage Items
- Use thresholds instead of pars for low-usage/high lead-time items.
- Determine reorder threshold based on lead time.
- Review weekly during inventory and order if below threshold.
Making Adjustments
- Weekly pars are guidelines, not strict limits.
- Managers must ensure sufficient product without overstocking or relying on nearby locations.
- Orders must be adjusted based on catering, events, or holidays.
- Use food cost percentage to guide ordering if sales projections vary significantly.
